Turmeric Tomato Soup


  •  5-6 organic vine ripe tomatoes, cut into big cubes
  •  1 large yellow onion, chopped
  •  2 cups of coconut milk
  •  2 1/2 tablespoons cold pressed coconut oil
  •  A small thumb-sized nub of turmeric root, peeled
  •  300g yellow onion (one medium)
  •  2 medium garlic cloves, chopped
  •  1 teaspoon pink Himalayan sea salt

Heat the coconut oil in a medium soup pot with the chopped onion for about 5 minutes over med-low heat. Stir in the coconut milk, turmeric, salt, and garlic. Next, add in all the tomatoes. Cover and heat for 20 minutes, then blend together (we used a Vitamix). Enjoy!
